Pumpkin soup

Here's a delicious and simple pumpkin soup recipe:

Ingredients:

  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 kg (2 lbs) pumpkin, peeled and diced (butternut squash or any sweet pumpkin variety)
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • Salt and pepper to taste
  • Optional garnish: toasted pumpkin seeds, a drizzle of cream or coconut milk, fresh parsley, or croutons

Instructions:

  1. Sauté onions and garlic: Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

  2. Cook the pumpkin: Add the diced pumpkin, cumin, and cinnamon to the pot, stirring to coat the pumpkin in the spices. Cook for about 5-7 minutes, stirring occasionally.
